Whipped Feta
Ingredients
1 2/3 cup feta cheese (preferably Valbresa or another soft feta)
1 2/3 cup cream cheese (such as Philadelphia), room temperature
3/4 cup Greek yogurt (full-fat)
Directions
Add the cream cheese to a food processor and blend until completely smooth.
Add the Greek yogurt and feta.
Blend until fully combined and silky, scraping down the sides as needed.
To serve, transfer to a shallow bowl. Top with diced cucumbers and finish with a drizzle of high-quality Greek extra virgin olive oil.
Serve with warm bread or alongside fresh vegetables like sliced cucumbers.
Variations
Spicy Whipped Feta
Char a Fresno chile pepper until blistered. Remove the skin and blend it in with the feta and cream cheese. For added color and sweetness, blend in Florina peppers or any roasted red peppers.
Finish with diced roasted red peppers and a drizzle of olive oil.
Chef’s Note
