The restaurant: Onefold, 5960 S. Holly St., Greenwood Village
About: Mark and Terese Nery opened Onefold’s first location in Uptown in 2015 and added a second in Union Station in 2021. But as downtown Denver’s office vacancy rate continues to rise, the Nerys were eager to “branch outside of Denver a little bit,” Mark said.
“There’s more traffic and fuller offices down south since more people are making their way out to the suburbs,” he added. “I also heard construction and getting permits is a lot easier.”
Onefold’s new location will be next to King Soopers and Venice Ristorante in a center called The Orchards. There will be 100 seats inside and a large, outdoor patio.

Mark is ready to have a brief escape from “the riff-raff” he’s experienced in Denver, particularly referring to the vandalism at both locations, including stolen umbrellas. “This is a good first step to heading down south,” he said. The restaurant is also eyeing Castle Rock for a possible expansion.

What’s on the menu: Onefold’s Greenwood Village menu will remain largely the same as its two other locations. The brunch spot is known for its mishmash of cuisines. Terese’s Chinese heritage is on full display with dishes like congee and Chinese roasted duck noodle soup, while Mark, who’s half-Filipino, made sure to include fried rice dishes reminiscent of his childhood. On top of that, there are a variety of Mexican dishes in the fold, like classic Huevos Rancheros or breakfast quesadillas and tacos with green chile.
Opening: Aiming for a September.
