Michelin-starred restaurant remains closed after equipment malfunction

Restaurant life isn’t easy — even for those with a Michelin star.

Brutø announced via social media that unexpected equipment maintenance had temporarily closed the small chef’s counter restaurant on Oct. 2. Id Est Hospitality, which owns Brutø, The Wolf’s Tailor, Hey Kiddo and Basta, confirms that it will remain closed until at least Nov. 1.

A spokeswoman for the company, led by chef Kelly Whitaker, told The Denver Post that “it was an issue with the hood vent” in the kitchen.

“We’re grateful we were able to reschedule all of our reservations to November, which is the latest date we expect to reopen,” the company said. “Chef Byron Gomez and the rest of the team are using this time to further develop the November menu.” Guests who had reservations in October were rescheduled for future dates or offered refunds, the spokeswoman added.

In March 2023, a fire in the restaurant’s wood oven — which required a response from the fire department — forced the business to close for over a week.

Opened in 2019, Bruto, at 1801 Blake St., won a Michelin star in 2023 under the direction of then-chef Michael Diaz De Leon, who left the restaurant in December of that year. In September, Bruto retained its star even as the menu changed under the leadership of Gomez.
