Anyone playing “20 Questions” probably won’t guess Torani’s new syrup flavor for 2025, unless they go hard on “mineral.”
The flavor is called “Diamond.”
Torani, the San Leandro-based company that makes more than 150 syrups and sauces to flavor coffee, cocktails and sodas, announced on Nov. 13 that its new clear syrup tastes like vanilla and sparkling wine (without the alcohol). The Diamond syrup is a festive brew meant to commemorate Torani’s 100th anniversary, as it was founded by Italian immigrants as the R. Torre & Company in San Francisco in 1925.

The choice of Diamond follows “the latest consumer trends, which indicate a shift toward ‘fantasy flavors’ and low/no-ABV beverages,” Torani said in a statement. Diamond is the second fantasy flavor Torani has dabbled in, having released “Galaxy” for 2024. That one had a rum-raspberry flavor and was supposedly based on the molecular composition of outer-space dust clouds.
Market researchers and food scientists spent a year whittling down more than 200 flavor concepts to create Torani Diamond Syrup. “Diamond was ultimately selected due to its celebratory nature, symbolism as a token of commitment, and the 10-carat diamond’s status as the official 100th anniversary gemstone,” the company announced, and the syrup can be used in “a wide range of beverages, including cold brew, matcha, energy drinks, and refreshers.”
(Whoever’s adding sugar syrup to their energy drinks, lord help them and their cardiologist.)
This special anniversary syrup has a charity aspect as well, with 100 percent of the profits going toward nonprofits that create job opportunities for at-risk youth, adults with intellectual disabilities and others.
